My favorite picnic foods are easy to make, easy to eat, and of course healthy. Nutty Broccoli Bites fit the bill. They’re one of my kids’ favorite vegetable dishes and also my go-to salad and go-to appetizer when I take food to a party.
Nutty Broccoli Bites
1 Head broccoli
1/4 cup mayonnaise type salad dressing
1/4 cup plain yogurt
Flavoring choice (below)
1/3 cup nuts chopped
Flavoring choices (choose one):
1 1/4 teaspoon curry powder
2 tablespoon homemade jelly (I use basil jelly)
4 teaspoons grated fresh ginger + 1/2 teaspoon grated orange rind
1 teaspoon grated orange, lemon or lime rind
1. Cut the broccoli into florets.
2. Mix the mayonnaise, yogurt and one flavoring choice together.
3. Chop nuts to desired consistency.
4. Dip the broccoli into the dressing then into the nuts. You’re done!
Recipe Notes: This also works well with cauliflower florets. Use your imagination and come up with your own flavoring options. Other flavorings I’ve tried: oj concentrate, orange marmalade and pesto. If you use a liquid like oj concentrate you may need to omit the yogurt as you need it thick enough to hold the nuts.
